A quick dish that provides plenty of lean protein from the turkey, carbohydrates from the potatoes and healthy fats from the oil – a smart (and tasty) addition to any runner’s diet, pre- or post-workout.
16,9 oz /480 g ground turkey
4,2 oz /120 g leek
1/2 cup / 20 g fresh herbs
1 cup /240 ml greek yogurt
35,3oz /1000 g potatoes
4 tbsp olive oil
Set the oven to 390°F/ 200°C
Slice the potato into wedges, add to a sheet pan with half the amount of oil and bake in the oven for 20-30 minutes
Slice the leek and mix with the ground turkey, season with salt and optional spices like paprika powder and ground cumin.
Form to 8-16 patties, fry in half the amount of oil on medium-high heat in a non-stick frying pan until golden.
