Sweet Potato Salad with Spinach, Pomegranate, and Feta

Packed with folate, vitamins A, C, and K, and plenty of other nutrients, this easy sweet potato salad is a healthy and delicious dish that's easy to meal prep!

Ingredients

4 servings

  • 3 large sweet potatoes
  • 1 tbsp olive oil
  • Salt flakes
  • Seeds from 1 medium pomegranate
  • 400 g baby spinach leaves
  • 150 g feta cheese

Instructions

  1. Preheat the oven to 200 degrees celsius (400 degrees fahrenheit)
  2. Peel the sweet potatoes, chop them into eighths and put them on a baking sheet. drizzle them with olive oil, toss them until they are coated and sprinkle som salt flakes on top.
  3. Roast them in the oven for 20-30 minutes or until they are tender and golden. Remove them from the oven and let them cool.
  4. Combine the room temperature sweet potato, pomegranate seeds, spinach leaves and crumbled feta cheese in a large bowl.
