Breakfast Omelette with Spinach, Tomatoes, and Leeks

Vitamins, fiber, and iron - oh my! This breakfast omelette recipe is a healthy way to start your day and pack in plenty of protein early.

Ingredients

4 servings

  • 8 eggs
  • 2 dl (200 ml) milk 3%
  • 2 tsp vegetable oil
  • 4 table spoons leek, coarsely chopped
  • 50 g cherry tomatoes, halved
  • 2 tbsp grated cheese
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 200° C (390° F) .
  2. Put eggs in a bowl together with milk and whip. Add salt and pepper.
  3. Grease a baking dish with olive oil. Put leeks and tomato in in the bottom.
  4. Pour in the egg mixture, add cheese on top.
  5. Bake in the oven for 20 minutes.
