35.2 oz / 1000 g potatoes
17.6 oz / 500 g salmon fillet
1 tbsp olive oil
1/2 cup/ 120 ml lemon juice
4 tbsp dijon mustard
1/2 cup / 120 ml reduced fat cream cheese
2 cups / 480 ml water
4 tbsp capers

Boil the potatoes in salted water for 20 minutes.

Add the olive oil to a frying pan on high heat, fry the salmon for 2-3 minutes and turn when golden. Salmon is not only a good source of protein, but also an amazing source of healthy fats such as Omega-3!

Turn the heat down and add lemon juice, dijon mustard, cream cheese, water and capers into the pan. Stir the sauce around and let it simmer for 5 minutes.

Serve with boiled potatoes and, if you feel like it, spice it up with some lemon and dill! Mmmmmm.
