Salmon with Lemon Sauce

Fish and citrus pair perfectly in this salmon with lemon sauce recipe; it's an ideal clean eating meal!

Ingredients

  • 35.2 oz / 1000 g potatoes
  • 17.6 oz / 500 g salmon fillet
  • 1 tbsp olive oil
  • 1/2 cup/ 120 ml lemon juice
  • 4 tbsp dijon mustard
  • 1/2 cup / 120 ml reduced fat cream cheese
  • 2 cups / 480 ml water
  • 4 tbsp capers

Instructions

  1. Boil the potatoes in salted water for 20 minutes.
  2. Add the olive oil to a frying pan on high heat, fry the salmon for 2-3 minutes and turn when golden. Salmon is not only a good source of protein, but also an amazing source of healthy fats such as Omega-3!
  3. Turn the heat down and add lemon juice, dijon mustard, cream cheese, water and capers into the pan. Stir the sauce around and let it simmer for 5 minutes.
  4. Serve with boiled potatoes and, if you feel like it, spice it up with some lemon and dill! Mmmmmm.
