Orange and red cabbage salad with dates and smoked trout

Sweet, salty, tangy, and crunchy play together in this incredible-tasting salad that's perfect for a clean eating diet.

Ingredients

  • 4 tablespoons walnuts
  • 1 small head of  red cabbage (ca. 800 g)
  • 2 small onions
  • 7 tablespoons fruit vinegar
  • salt, pepper
  • 1 tablespoon sunflower oil
  • 4 tablespoons beet root sprouts or alfalfa sprouts
  • 2 oranges
  • 70 g dried cored dates
  • 250 g smoked trout fillets

Instructions

  1. Roast the walnuts in a frying pan without fat, take them out and set them aside.  Clean and wash the cabbage, cut it in quarters and remove the stalk. Cut the cabbage in fine stripes. Peel the onions and cut them in very fine stripes. Mix cabbage, onions, vinegar, salt, pepper and oil and knead everything together with your hands.
  2. Wash the sprouts and allow them to drain. Wash the oranges with hot water, dry them and grate the zest. Peel both oranges that the white skin will be completely removed. Cut out the fillets from between the skin. Squeeze the juice from the skin. Cut the dates in fine rings and chop the nuts.
  3. Mix the red cabbage salad with the orange zest, orange fillets, dates and nuts and season to taste. Serve with trout fillets and sprouts.
