Mango Ceviche

We are celebrating another food day – today is Ceviche Day! Ever tried it? It’s a straightforward recipe with very low calories that definitely deserves a try. The good news is, you don’t even have to cook it – the lime takes care of the cooking process. It looks (and tastes) like magic 🤪 

Ingredients

4 servings

  • 1kg Cod
  • 2 mangos
  • 3 limes
  • 2 lemons
  • 1 orange
  • 1 small red onion
  • fresh chili
  • 50g Coriander
  • salt

Instructions

  1. Cut the cod and the mango in dices, try to keep them at the same size.
  2. Cut the onion and the chili in thin slices.
  3. In a bowl, combine fish, lime juice, lemon juice, orange juice, chili, and onion, and toss until well coated (make sure the fish is all covered by the liquid).
  4. Cover the bowl then refrigerate for at least 2 hours until the flesh is opaque colored.
  5. When ‘cooked’, take away some of the juice left, add salt, coriander, and mango.
  6. Serve it cold. Enjoy!
