Feta Cheese and Bean Salad

If you're considering going vegetarian, this feta cheese and bean salad may just help you make the leap.

  • 150g sweet potatoes
  • 50g cherry tomatoes
  • 115g cooked white beans
  • ¼ red onion (20g)
  • 30g baby spinach
  • 50g feta cheese
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lemon juice


  1. Set the oven to 375°F/190°C
  2. Peel and cut the potato into wedges, add salt and optional spices over the potatoes and tomatoes and roast on a baking sheet for 20-30 minutes.
  3. Rinse the beans in water and cut the onion into thin slices.
  4. Add the spinach, sweet potatoes and tomatoes onto your plate.
  5. Drizzle the oil and lemon juice over the beans and crumble the feta cheese on top.
  6. Season with salt and pepper and fresh herbs, if you feel like add a little glam to it!
  7. If you prepped for a food box, you don’t have to reheat the potatoes, they are amazing to eat cold!
