Ingredients

200g carrots
150g sweet potatoes
1/2 yellow onion
1 vegetable stock cube
400ml water
80g light quark
1 Tbsp olive oil
1 ½ Tbsp sunflower seeds
Instructions

Peel and cut the carrots, potatoes and onion into smaller pieces.

Add water, vegetable cube and the veggies in a casserole under a lid and boil for 10 minutes or until soft.

Mix smooth with a rod mixer season with salt and pepper. Add some more water if it´s too thick.

Top it with quark, olive oil and sunflower seeds.

Tip! Make it even greener with some fresh herbs and onion on top.
