Sweet Potato Stew

This hearty and healthy vegan stew serves up some serious nutrition! Packed with plant-based protein and important nutrients to help protect you from seasonal sickness.

Ingredients

4 servings

  • 2 yellow onions
  • 20 oz sweet potatoes
  • 2 tbsp canola oil
  • 1 1/3 cups red lentils
  • 8 tbsp tomato paste
  • 2 cups coconut milk
  • 8 cups vegetable stock
  • 2 tbsp curry
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 cup chopped cilantro

Instructions

  1. Chop the onion and cut the sweet potatoes into cubes.

  2. Add oil to the saucepan and fry the onion and the potatoes on medium-high heat for a few minutes.

  3. Add lentils, coconut milk, tomato paste, vegetable stock and curry.

  4. Bring to boil and let it simmer for about 15-20 minutes.

  5. Season with salt and pepper.

  6. Tip! Add some fresh cilantro and fresh chili for more flavor.
