Chop the onion and cut the sweet potatoes into cubes.
Add oil to the saucepan and fry the onion and the potatoes on medium-high heat for a few minutes.
Add lentils, coconut milk, tomato paste, vegetable stock and curry.
Bring to boil and let it simmer for about 15-20 minutes.
Season with salt and pepper.
Tip! Add some fresh cilantro and fresh chili for more flavor.
