120g chicken fillet
250g potatoes
150g broccoli florets
1 Tbsp olive oil
80g light quark
20g cucumber

Set the oven to 375°F/190°C

Season the chicken fillets with your choice of spices.

Cut the potato into wedges or squares and place on an oven-proof form with the chicken. Drizzle oil, sprinkle a little salt and pepper. Season with optional spices for more flavour.

Bake in the oven for 20 minutes, then add broccoli. Cook for another 10 minutes or until done.

Mix together quark, shredded cucumber, salt and pepper and serve to those hungry bellies!
