Healthy Gravy

Gravy goes well with almost any protein, veggies, and especially mashed potatoes. Try this healthy gravy recipe to get all the flavor without empty calories.

Ingredients

  • 2 large carrots
  • 1 large onion
  • 1 chopped garlic clove
  • 1 tsp dried thyme
  • 1 tbsp canola oil
  • 1 tbsp tomato paste
  • 3 tbsp balsamic vinegar
  • 4 cups / 960 ml chicken stock
  • 1 tbsp cornstarch
  • 1/4 cup / 60 ml water

Instructions

  1. Chop the carrots and the onion.
  2. Add oil to a saucepan on a medium-high heat, then add the vegetables and cook them for about 10-15 mins.
  3. Add the tomato paste, garlic, thyme and vinegar.
  4. Pour in the stock and season with salt and pepper.
  5. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Mix until smooth using a hand mixer or in a blender. Strain the gravy.
  7. Whisk together the cornstarch with water and add it to the gravy. Bring to a boil, stirring constantly while the gravy is thickening.
