150g chicken fillet
30g red onion
30g stalk celery
120g apples
125g low-fat Greek yogurt/ low fat quark
100g grapes
30g mixed salad
3/4 Tbsp olive oil

Preheat the oven to 220°C/430°F.

Toss the chicken with olive oil, salt and optional spices. Place the chicken in an oven-proof form and bake for 20 minutes or until done. Shred the chicken and let it cool down.

Chop the onion and celery stalks, cut the apples into cubes and cut the grapes in half.

Add the chicken, celery, apples, onions, grapes, yogurt/quark, salt and pepper. Serve with salad and enjoy!
