BBQ tofu with bean salad

Tofu takes on flavors very well, so marinate it to amplify the flavor of this healthy vegetarian meal!

Ingredients

4 servings

  • 19 oz / 540 g firm tofu
  • 1/2 cup / 1 dl / 100 ml smoky bbq sauce
  • 1/2 teaspoon salt
  • 1 can mixed cooked beans (15 oz) / 380 g
  • 5 oz / 150 g  frozen or fresh haricots verts
  • 9 oz / 250 g cherry tomatoes
  • 1 red onion
  • 3 tbsp fresh oregano
  • 3 tbsp olive oil
  • 1 ½ tsp sea salt
  • 1 tsp chili flakes
  • 1 lemon juice + zest

Instructions

  1. Cut the tofu in slices, marinate in the bbq sauce and salt.
  2. Pour out the liquid from beans and rinse them in water.
  3. Bring salted water to a boil and add the haricots verts for 2 minutes. Drain the water and rinse the haricot verts in cold water.

  4. Thinly slice the red onion and cut the tomatoes in half. Mix the red onion and tomatoes together with beans, oregano, olive oil, lemon zest, lemon juice, and salt.

  5. Grill the tofu on a grill or in a grill pan on high heat. Serve with the salad.
