Vegan Cauliflower Garam Masala

Here's a vegan dish for you guys! Cauliflower Garam Masala 😜 We’re always cooking our recipes in the office so all the Lifesummers can try it. Ingredients

4 servings

  • 1 cauliflower head (800g)
  • 1 can crushed tomatoes
  • 2 tbsp garam masala
  • 1 vegetable stock tablet
  • 80g cashew nuts
  • 50ml coconut cream
  • 1 small onion
  • 2 cloves garlic
  • 1 tsp chili flakes
  • 1 cup water
  • 30g chives
  • 1 tbsp olive oil

Instructions

  1. Cut the cauliflower in medium size pieces. Cut the onion and garlic in small dices and crush half of the cashew nuts.
  2. In a pan, add the olive oil, garlic, and onion and fry until golden, Add the cauliflower, the crushed tomatoes, garam masala, stock tablet and the water. Cook in medium heat until the cauliflower is soft.
  3. Add the coconut cream, the cashew nuts, and the chives. Serve with rice.
