Brussels Sprout Salad with Shrimp

Ingredients

4 servings

  • 3/4 cup mayonnaise
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 tbsp chopped dill
  • 1/2 tsp salt
  • 8  brussels sprouts
  • 1 fennel bulb
  • 2 avocados
  • 4.2 oz mache lettuce  
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 14 oz of shrimps
  • Picked dill for topping

Instructions

  1. Mix together mayonnaise, lemon zest, lemon juice, dill, salt, and pepper.
  2. Rinse the Brussels sprouts and the fennel bulbs, cut thinly.
  3. Cut the avocados in half.
  4. Place the salad in 4 bowls, top it off with shrimps, the dressing, salt, pepper and, dill.
