Seafood Soup with Aioli

Ingredients

4 servings

  • 1 small yellow onion
  • 1 garlic clove
  • 2 tablespoons oil
  • 1 1/2 tablespoon tomato paste
  • 1 tablespoon thyme
  • 1 teaspoon chili flakes
  • 1 tablespoon fish stock
  • 1 1/4 cup / 3 dl (300 ml) heavy cream
  • 2 cup / 4 dl (400ml) water
  • 1/4 cup / 1/2 dl (50 ml) lemon juice
  • 7 oz / 200 g of cod
  • 7 oz / 200 g of salmon
  • 14 oz 400 g blue mussels with shell
  • 10.6 oz / 300 g peeled shrimps
  • 1/2 cup / 1 dl (100 ml) mayonnaise
  • 1 garlic
  • 1/2 cup / 1 dl picked dill

Instructions

  1. Peel and chop the onion and garlic, put into a large saucepan add oil, and fry until soft.  
  2. Add tomato puree, thyme, and chili flakes.
  3. Pour on water, cream, fish stock, and the mussels, place a lid on the saucepan and let it simmer for about 10 minutes.
  4. Cut the cod and salmon into smaller cubes and put them into the pot, simmer for a few more minutes.
  5. Peel and chop the garlic, mix with mayonnaise.
  6. Top the soup off with shrimp, aioli, and fresh dill.
