Cauliflower Soup and Chicken Skewers

Soup is always a good idea. This is a creamy, tasty cauliflower soup that is fast and easy to make - perfect for a vitamin boost!

Ingredients

4 servings

  • 1 small yellow onion
  • 1 garlic clove
  • 14 oz / 400 g cauliflower
  • 3 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 vegetable broth cube
  • 2 1/4 cup / 5 dl (500 ml) water
  • 1 1/4 cup / 3 dl (300 ml) heavy cream
  • 1/2 tablespoon white wine vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon of white pepper
  • 14 oz / 400 g chicken fillet
  • 1 tablespoon of oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili flakes,
  • 1/2 cup/1 dl garden cress

Instructions

  1. Peel and slice the onion and garlic.
  2. Divide the cauliflower into smaller pieces.
  3. Fry the onions and garlic in the butter in a saucepan until they soften. Add cauliflower, thyme, broth, water, and cream. Bring to boil and lower the temperature, let it simmer for about 10 minutes.
  4. Mix the soup smoothly with rod mixer. Add the vinegar, season with salt and pepper.
  5. Cut the chicken fillets into smaller pieces. stack them on wooden skewer and brush with oil, season with salt and chili flakes.
  6. Grill the chicken skewers in the pan for about 6-8 minutes.
  7. Top it off with garden cress.
