Carrot Fritters with Wheat Salad

Think you need eggs to make fritters? Think again! Vegan carrot fritters prove anything is possible!

Ingredients

4 servings

  • 1 1/4 cup / 3 dl / 300 ml wheat berries
  • 2.6 oz / 70 g baby spinach
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 17.6 oz / 500 g finely shredded carrots
  • 1 yellow onion
  • 1 garlic clove
  • 1/2 cup / 1 dl / 100 ml breadcrumbs
  • 1/4 cup / 1/2 dl / 50 ml flour
  • 2 tsp curry powder
  • 2 tsp paprika powder
  • 1 tsp turmeric
  • 1 tbsp vegetable stock
  • 3 tablespoons olive oil
  • 1 cup / 2 dl / 200 ml chopped mint
  • 1 1/4 cup / 3 dl / 300 ml plant-based yogurt
  • 1/2 tsp salt
  • 1/4 tsp chili flakes

Instructions

  1. Cook the wheat berries according to the package,  add the spinach, salt and pepper before serving and stir.
  2. Finely chop the onions and garlic, add bread, flour, spices, salt, and pepper.
  3. Add the shredded carrots and shape to about 16 balls. Add oil to a non-stick frying pan and place in the pan, flatten them in the frying pan and fry them golden.
  4. Mix together chopped mint, yoghurt, salt, and pepper.
  5. Serve the fritters with salad and dressing.
