Tempura – in a bowl combine salt, baking powder and oat flour. Add club soda and coconut oil to the bowl and whist together until the batter is smooth.. Stir the beans into the batter until they are completely covered. Remove the beans from the batter (make sure they aren’t dripping), place on a lined baking sheet an bake for approx 15 minutes, turning them over half-way through.
Salad – blanch the green beans until they’re green-ness emerges. Rinse them in cold water and drain them. Slice them in half. Combine in a bowl with sliced red cabbage, sliced spring onions, and peach wedges. Dress with a mixture of olive oil, minced garlic, balsamic vinegar and sea salt. Serve.
