Apple Salad

2 fuji apples, diced
juice of 1/2 lime
2 ribs celery, diced (if you don’t like the fibers in celery you can remove them with a vegetable peeler)
1/2 cup coarsely chopped walnuts
1/3 cup golden raisins
1/2 cup vanilla greek yogurt

Toss the apples with the lime juice in a bowl. Add celery, walnuts, and raisins, then toss. Fold the yogurt into the apple mixture. Season to taste with salt and pepper. Pack in tightly sealed, small plastic containers.

Apple Breakfast Bars

1 cup oats
1 scoop whey protein
1/4 cup chopped apricots
1/4 cup seeds/chopped nuts
2 apples, roughly chopped
1 tbsp melted coconut oil
2 tbsp maple syrup
1 tbsp ginger
1 tsp vanilla extract
pinch of salt

Preheat the oven to 375 F. Add the chopped apples to a food processor & pulse them until they are finely chopped and have turned ‘mushy’.
Mix together the oil, syrup & vanilla in a pan over medium heat before adding the diced apples & mixing well.
Mix together the oats, dried fruit, seeds/nuts, salt & cinnamon in a separate bowl before adding to them the apple, oil, syrup & vanilla mix.
Press the mixture into a baking tin lined with baking paper & bake for 15-20 minutes until golden
Leave to cool, and then cut into 9 bars
