Vegetables are surprisingly filling – it’s all that fiber. Here’s one way to make sure you eat them without getting bored:

What you need:
1 red onion, sliced
2 medium sized carrots
1 small cauliflower head, cut into florets
17 oz / 500 g broccoli, cut into florets
2 peppers, chopped
1 tbsp olive oil
2 tbsp fresh rosemary
2 tbsp fresh thyme

What you do:
Preheat the oven to 175 C / 350 F / GM 4. Use a mandoline or slicer to slice the carrots lengthwise. Put in a bowl together with the rest of the vegetables. Drizzle with olive oil and add fresh rosemary and thyme. Cover a baking sheet with baking paper. Spread out the vegetables and bake in the oven for 25-30 min until golden and tenderly roasted.
