Cook now, enjoy later: 5 things you can make and eat twice

For a lot of us, especially those of us with kids, the idea of cooking several times a week can be overwhelming, intimidating, or just plain stressful. The planning, the shopping, the prepping… it can all just get to be a lot.

That’s when it can be handy to know that there are things you can make and eat one night that will make a nice an easy base for another. Here are a few of our favorites.

1. Chicken

First you make chicken…

Thoroughly season a whole chicken, cover it in an oven-safe dish with high sides, and let it cook in its own juice. Serve with veggies and roast potatoes!

…then you make chicken noodle soup

Save all the juice from the chicken, and be careful to save any remnants of meat left on the bone, along with meat you don’t eat on night one. On another night, throw all the juice in a pot, add a little water, a little salt, and throw in some cut up veggies and some pasta. Chicken noodle soup in a flash!

2. Potatoes

First you make roast potatoes…

You know the drill with roasting potatoes; you can par-boil them and then throw them in the oven with oil and your favorite herbs, or you can throw straight into the oven without boiling. Either way, make more than you need new keep the leftovers in the fridge.

…then you make mashed potatoes

Smash them. Use a potato masher to mash the potatoes into your desired consistency, add a little butter or milk if necessary, and serve along side some greens and a healthy lean protein.

3. Vegetables

First you make roasted veggies…

Roasted veggies are the best because they don’t need to be stirred, watched, or honestly monitored in anyway possible (just don’t let them burn!). Cut up your favorite colorful root veggies, spread them out on a roasting tray, and drizzle them with avocado or coconut oil. Roast, and enjoy alongside chicken, fish, or a veggie burger.

…then you make soup

Place your leftover veggies into a blender along with any additions you might want; e.g. chickpeas, or leafy greens, add some stock, and some cream, and there you have it, a soup!

4. Sauce

First you make tomato sauce…

First, don’t be put off by the idea of homemade pasta sauce. It’s easier than you think. You literally need some tomato paste, some diced tomatoes, oil or butter, garlic, basil, and oregano. Make it (without meat), and then add homemade meatballs to your bowl and serve with pasta.

…then you make curry

All you need is some curry paste, some coconut milk, and a few spices. Put them in a pan and stir. Add chicken if you want (or don’t!), and serve with lentils or rice.

5. Anything else

First you make pretty much anything…

Need we say more?

…then you make quesadillas/frittatas

But seriously, you can throw pretty much anything into one of these (within reason). For the quesadilla, you pretty much just need cheese and tortillas; for the frittata, you just need eggs.
