Who even needs bread for a burger when you can make your own with cauliflower? This stuff is genius, so you can thank us in advance.

What you need:
1/2 medium sized cauliflower head
1/4 cup mozzarella
2 tbsp parmesan, grated
1 egg
1 tsp dried oregano
Salt and pepper
1 tsp olive oil
Spinach
Avocado
Tomato
Red onion
Quark / Greek yogurt
Pesto

What you do:
Preheat the oven to 160 C / 320 F. Trim the cauliflower from core and cut into pieces. Add cauliflower to a food processor and pulse until the cauliflower is finely chopped and “rice”-shaped. Add the cheese, egg, oregano, salt and pepper and pulse a few more times. Line a baking sheet with baking paper and grease with olive oil. Form 0,4 inch / 1 cm thick patties of the cauliflower mixture and place on the sheet. Bake for 40 min until golden and firm like a bread. Let cool and remove by using a spatula. For the sauce whisk together quark with pesto. Cook your burgers, place them on a cauliflower buns and top your burgers with vegetables and pesto sauce for the best low-carb burger you’ll ever have.
