What you need:

For the crêpes:

  • 6 egg whites
  • 2 scoops vanilla protein powder
  • 1 tsp vanilla powder
  • 2 tsp stevia
  • 2 tbsp milk
  • 1.5 tbsp coconut oil (for frying)

For the filling and toppings:

  • ⅔ cup / 200 g Greek yogurt or quark
  • 1 scoop / 30 g vanilla protein powder
  • 1 tsp stevia
  • 0.5 tsp vanilla powder
  • 1 cup / 200 g chopped strawberries
  • 1 cup / 200 g chopped pineapple
  • ⅔ cup / 60 g walnuts

What you do:

  1. Add all crêpe ingredients (except coconut oil) to a food processor or blender and blend until smooth.

  2. Heat a portion of the coconut oil in a large pan over medium heat. Pour in a fourth of the batter, spread it out thinly, and cook for about 2 minutes on each side. Repeat with the remaining batter.

  3. In a separate bowl, combine the Greek yogurt, vanilla protein powder, stevia, and vanilla powder until smooth.

  4. Fill each crêpe with the yogurt mixture, chopped strawberries and pineapple, then roll up. Top with walnuts and serve immediately.
