Roasted Beans and Vegetable

Ingredients

4 servings

  • 2 lb Sweet potatoes
  • 1 Red onion
  • 4 cups Cooked white beans
  • 2 tbsp Canola oil
  • 5 cups Chopped kale
  • 1/2 cup Plant-based yogurt
  • 2 tbsp Dijon mustard
  • 1 tsp Salt
  • 1 Ground black pepper
  • 1 tsp Thyme
  • 1 tsp Garlic powder
  • 1 cup Chopped parsley

Instructions

  1. Set the oven to 400 degrees Farenheit.

  2. Cut the sweet potatoes into cubes and dice the onion.

  3. Rinse the beans.

  4. Add the potatoes on a sheet pan, drizzle oil, and season with salt, pepper, thyme and garlic powder. Roast in the oven for about 15 minutes.

  5. Add the red onion and beans, and roast for another 5 minutes.

  6. Add the kale to the warm veggies and mix around.

  7. Mix the yogurt and mustard together and drizzle the dressing over the vegetables before serving.

  8. Garnish with some fresh parsley and enjoy.
