Grilled Beef with Veggies

Ingredients

  • 1 1/2 lb Sirloin steak
  • 2 1/2 Zucchini
  • 1 Red onion
  • 1 1/4 lb Cherry tomatoes
  • 4 cups Baby spinach
  • 4 tbsp Olive oil
  • 1 tsp Sea salt
  • 1 tsp Ground black pepper
  • 1 tbsp Lemon zest
  • 3 tbsp Chopped parsley

Instructions

  1. Cut the tomatoes and onion into smaller pieces, add oil, parsley and lemon zest.

  2. Cut the zucchini into thicker slices, heat up a grill pan and grill the zucchini on both sides.

  3. Grill the steaks on high heat in a grill pan to your preference (well done, medium, rare). Season with sea salt and pepper.

  4. Let the meat rest for 5 minutes, serve with the veggies, and dig in!
