Carrot and Mashed-Pea Patties

Ingredients

  • 4 Large carrots
  • 4 cups Frozen green peas
  • 4 Eggs
  • 1 cup Sliced green onions
  • 3/4 cup All-purpose flour
  • 2 tsp Sea salt
  • 1 tsp Ground pepper
  • 4 tbsp Olive oil
  • 2 cups Low-fat Greek yogurt
  • 4 cups Spring mix

Instructions

  1. Let the green peas thaw.

  2. Use a fork and mash the peas.

  3. Peel and shred the carrots.

  4. Add carrots, green peas, egg, sliced green onions, flour, salt, and ground pepper into a bowl and mix until combined.

  5. Form into 16 fritters and cook on medium-high heat in a nonstick frying pan, until golden on each side.

  6. Serve with yogurt and salad
