Baked Gingerbread Energy Bars

Ingredients

  • 150 g almonds
  • 115 g walnuts
  • 14 pitted dates
  • 60 ml egg whites
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger

Instructions

  1. Set the oven to 190°C.

  2. Add all the ingredients to a food processor and pulse until combined.

  3. Place the dough onto parchment paper and press it into an 18 x 18 cm square.

  4. Bake for 15-20 minutes.

  5. Allow the bars to cool for 5 minutes and then cut into 8 bars.

  6. Store in an airtight container in the refrigerator.
