Preheat oven to 350 F.
Add all dry ingredients to a blender and blend for 1 minute.
Pour the mixture out into a bowl.
Shred the apple.
Add eggs, unsweetened plant-based milk, oil and, dates to a blender and mix smooth.
Add the mixture to the dry ingredients, shredded apple, and sea salt and mix until combined.
Add the batter into 12 non-stick muffin cups and bake in the oven for 15-20 minutes.
