Almond and Apple Muffins

Ingredients

  • 1 cup Almond flour
  • 1 cup Old-fashioned rolled oats
  • 3/4 cup Buckwheat flour
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1 tsp Ground cardamom
  • 1 tsp Ground ginger
  • 1/4 tsp Sea salt
  • 3 Eggs
  • 3/4 cup Oat milk
  • 4 tbsp Olive oil
  • 15 Pitted dates
  • 1 Apple

Instructions

  1. Preheat oven to 350 F.

  2. Add all dry ingredients to a blender and blend for 1 minute.

  3. Pour the mixture out into a bowl.

  4. Shred the apple.

  5. Add eggs, unsweetened plant-based milk, oil and, dates to a blender and mix smooth.

  6. Add the mixture to the dry ingredients, shredded apple, and sea salt and mix until combined.

  7. Add the batter into 12 non-stick muffin cups and bake in the oven for 15-20 minutes.
