Cucumber-Spinach-Lassi with Apple

Serves 4 à 200 ml (1 glass: 90 kcal, 5 g protein, 2 g fat, 12 g carbs)

 

Ingredients:

  • 1 walnut-sized piece of ginger
  • 1 cucumber
  • 100 g young spinach leaves
  • 1 apple (e.g. Granny Smith)
  • 2–3 stalks of mint
  • 500 g low-fat yogurt
  • salt, pepper

 

Preparation:

1. Peel and wash the ginger, then finely chop it. Peel the cucumber, cut it in half lengthways, core and cube. Clean and wash the spinach and finely chop. Wash the apple, quarter and core it and cut it into cubes.  Wash and chop mint.

2. Finely puree yogurt, ginger, cucumber, spinach, mint and apple. Season with salt and pepper. Pour into 4 glassses, add ice and garnish with mint.
