Ingredients

  • 2 onions
  • 2 cloves of garlic
  • 2 medium zucchinis
  • 1 red pepper
  • 1 aubergine
  • 1 tbsp olive oil
  • 800 g crushed tomatoes
  • 3 dl red beans
  • 1 tbsp balsamic vinegar
  • salt & pepper
  • 0,5 tsp cummin (ground)
  • 1 bay leaf
  • 1 tsp thyme

Directions

  1. Chop the onions and garlics.
  2. Chop zucchini, peppers and aubergine roughly.
  3. Heat the olive oil in a deep pan. Fry the onions and garlic for 3 minutes.
  4. Add the aubergine, zucchini and red peppers and salt lightly. Cook for a further 5 minutes until lightly colored.
  5. Add tomatoes, beans and spices. Cover and cook for another 30-35 minutes until the vegetables are tender.
