Ingredients

  • 14 oz / 400 g firm tofu
  • 1 small red pepper
  • 2 tbsp finely chopped red onions
  • 1 cup / 2 dl (200ml) corn kernels
  • 1 jar cooked black beans á 13.4 oz / 380g
  • 1 tbsp rapeseed oil
  • 1 tbsp pepper powder
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 1/4 cup / 3 dl (300 ml) shredded green cabbage
  • 4 large whole grain tortilla

Instructions

  1. Crumble the tofu with a fork, fry in oil in a pan on medium heat. Season with peppers, cumin, garlic powder, and salt.
  2. Cut the pepper into smaller cubes, drain the water and rinse the beans.
  3. Mix together all the veggies and distribute the mixture, green cabbage, and tofu on the tortilla bread.
  4. Fold and serve.
