Ingredients

  • 1 cucumber
  • salt
  • pepper
  • 1/2 head of radicchio salad
  • 2–3 pieces spring onions
  • 4 figs
  • 1/2 pomegranate
  • 4 tablespoon cider vinegar
  • 1–2 teaspoon honey
  • 4–5 tablespoon olive oil
  • 200 g cottage cheese (3,9 % fat)

Instructions

  1. Wash the cucumber, clean it and take away some of the skin. Cut it into slices, season with salt and pepper, mix and let it rest for ca. 10 minutes.
  2. Wash the radicchio, clean it and and cut it into strips.
  3. Wash and clean the spring onions and cut them thinly into diagonal slices.
  4. Clean and wash the figs and cut them into eighths.
  5. Remove the seeds from the pomegranate.
  6. Mix vinegar, honey and oil.
  7. Add cucumber, salad, spring onions, pomegranate seeds, figs and mix well. Add some salt and more honey.
  8. Place cottage cheese on top. Serve.
