bowl of food with egg, radish, rice noodles, alfalfa and avocado

Bowls are trendy, and unicorns are cute, so why not make a unicorn bowl? Here it goes!

You will see there is some black caviar in the recipe. This one is a cheaper type, in Stockholm, a small pack costs 4,50 dollars. If you can’t find in your town, feel free to not add it or replace it with some other nice topping you like 🙂

Ingredients

200g rice noodles
2 leaves red cabbage
2 eggs
50g radish
1 avocado
30g Alfalfa sprouts
2 tsp caviar
2 tbsp Soy sauce
1 tsp sesame seeds

Instructions

  1. Boil the eggs the way you like the most. We suggest cooking the egg white hard and the yolk soft and creamy. When it is cooked, open right away, otherwise it will keep cooking and the yolk will be hard.
  2. Bring the water to boil, add the cabbage leaves and the rice noodles. Cook until the noodles are tender.
  3. In a bowl, place the noodles on the bottom, top with the eggs, half of one avocado, sliced radish, alfalfa sprouts, caviar and sesame seeds.
  4. Serve with soy sauce on the side.
  5. Enjoy your delicious and low-calorie meal
