Tuna and Chickpeas Salad

  • 90g tuna in water
  • 150g chickpeas
  • 70g red pepper
  • 70g kettle korn
  • 30g baby spinach
  • 100g low-fat cottage cheese – 1.5%
  • 1 Tbsp olive oil


  1. Drain the water out of the tuna.
  2. Cut the peppers into slices and add all the ingredients into a bowl. Drizzle with olive oil, and season with salt and pepper. 
  3. Add optional herbs and some lemon zest for extra flavor.
  4. If you are food prepping, be sure to leave the cottage cheese and spinach on the side
