Ingredients

  • 50g rice noodles
  • 150g tofu
  • 200g broccoli florets
  • 1 Tbsp olive oil
  • 2 Tbsp Japanese soya sauce
  • 30g baby spinach

Instructions

  1. Boil the noodles according to directions.
  2. Cut the tofu into smaller pieces. Add oil into a frying pan and fry the tofu and broccoli, adding the soya sauce and optional seasoning (garlic, lime, ginger and chili)
  3. Serve with the noodles and baby spinach.
  4. Give it some extra flavour with cilantro and lime!
  5. Don’t be afraid to make extra for another day! Eat it cold or warm – it´s so good it works either way!
