Sweet Potato Toast with Egg and Avocado

If you already heard of sweet potato toast, you probably also heard they are made in the toaster, right? WRONG!

Doing it on the toaster won’t cook the sweet potato fully and you will have to clean up a real mess. So read this post and learn the right way of doing sweet potato toast 😀

  • 1 big sweet potato
  • 1 tbsp olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 2 boiled eggs
  • 1 avocado
  • 1 pinch of chili
  • 2 tbsp cream cheese


  1. Wash your sweet potato.
  2. Pre-heat oven to 400°F or 200°C.
  3. Cut sweet potato lengthwise into thin slices, a finger wide.
  4. Coat sweet potato slices with a small amount of oil. Season with salt and pepper and place on a baking sheet with a little room between each slice.
  5. Bake for about 15-20 minutes, flip slices over and bake for another 15-20 minutes or until a fork can easily pierce the sweet potato. Don’t overcook or the sweet potato toast will become mushy.
  6. Remove from the oven and top with your toppings of choice. We suggest cream cheese, boiled egg and avocado or peanut butter, granola and hemp seeds. Enjoy!
