Roasted potatoes and vegetables

2 big potatoes
3 cups / 300 g Brussels sprouts
2 apples
2 red onions
2 cups / 80 g shredded kale
2 tbsp olive oil
1 bunch of fresh thyme
1 tsp salt
1/2 tsp chili flakes


  1. Preheat oven to 400°F / 200°C.
  2. Line a baking sheet with parchment paper.
  3. Cut the potatoes, apples and onions into wedges. Cut the Brussels sprouts in half.
  4. Season with oil, thyme, salt and chili flakes.
  5. Roast in the oven for 25 minutes.
  6. Add the kale and it´s ready to serve.
