Roasted Chicken with Veggies

If you don’t have an oven, try to get one. Your life will be soooo much easier with one. If you are super tired or feeling lazy, then gather all your favourite ingredients and seasoning and throw them in the oven. 20-30min later your dinner is ready.

  • 120g chicken fillet
  • 250g potatoes
  • 150g broccoli florets
  • 1 Tbsp olive oil
  • 80g light quark
  • 20g cucumber


  1. Set the oven to 375°F/190°C
  2. Season the chicken fillets with your choice of spices.
  3. Cut the potato into wedges or squares and place on an oven-proof form with the chicken. Drizzle oil, sprinkle a little salt and pepper. Season with optional spices for more flavour.
  4. Bake in the oven for 20 minutes, then add broccoli. Cook for another 10 minutes or until done.
  5. Mix together quark, shredded cucumber, salt and pepper and serve to those hungry bellies!
