This is a vegetarian recipe that will make your lazy self, enjoy every minute.
1 – Preheat the oven to 200C
2 – Place the cauliflower florets on a baking sheet and drizzle with 1 tbsp olive oil. Sprinkle with salt and pepper and mix.
3- Cook in the oven for 20-25 minutes or until golden brown, and stirring halfway through.
4 -While the cauliflower is cooking, heat a small pan over medium heat. Toast the pine nuts in a dry pan for 1-2 minutes, take it out of the pan. On the same pan, add 1 tsp coconut oil, the chopped dates, and thyme. Stir together for an additional minute, then mix together with the cauliflower florets in a serving bowl.
5- Serve warm and add additional thyme garnish.
