Frida, one of our nutritionists here at Lifesum, has been kind enough to share a recipe with us. It’s perfect for Saturday brunch!

Ingredients:
3 whole eggs
3 egg whites
80 g oats
250 g light cottage cheese
1 dl/100 ml low-fat milk
1 tsp salt
1 tsp baking powder
Sweetner + cinnamon to taste

Recipe:
Blend the oats so they resemble flour. Mix in the 3 whole eggs to make a dough. Add the rest of the ingredients and blend into a nice thin mixture. Fry in a non-stick pan for 2-3 minutes on each side (makes 7-8 servings)

Extras:
Frida adds 2 spoons of whipped cream and 2 spoons of raspberry jam (1 serving 548 cal), but if you want to avoid sugar or add more protein, swap those for 3 tbsp of cottage cheese and 1 dl (half a cup) of blueberries (1 serving 450 cal)
