  • 140g sliced roast beef 
  • 150g potatoes 
  • 125g apples 
  • 50g radish
  • 20 g mixed salad 
  • 1/2 Tbsp olive oil
  • 1 tsp dijon mustard
  • 1 tsp  lemon juice


  1. Boil the potatoes in salted water until done, about 20 minutes. Cut the potatoes in half.
  2. Let the peas thaw and cut the apples and radish into smaller pieces.
  3. Mix together olive oil, mustard, lemon juice, salt and pepper.    
  4. Toss the salad, potatoes, peas and the dressing in a bowl and serve with roast beef.
  5. Make sure to boil some extra portions of the potatoes, half  the work is done for next time!
  6. Veggies make you feel full and satisfied because of the high fibre and water content.
