Portobello Sandwich with Avocado & Tomato

  • 4 portobello mushrooms
  • 1 tbsp olive oil
  • 1 avocado
  • 0.5 tsp chili powder
  • 0.5 cup spinach
  • 1 beef tomato, sliced
  • 3,5 oz / 100 g smoked turkey, sliced


What you do:
Heat the oven to 200 C / 392 F. Toss the portobello mushrooms in olive oil and season with salt and pepper. Roast in the oven 20-25 min until the portobello is starting to look nice and juicy. Mash the avocado in a bowl and season with some salt and chili. Fill your portobello sandwich with mashed avocado, spinach, tomatoes and turkey slices.
