Keto Stuffed Tomatoes

  • ½ red onion
  • 200 g / 70 oz zucchini
  • 1 tbsp olive oil 
  • 800 g / 28 oz tomatoes (8pcs)
  • 150 g / 5,3 oz feta cheese
  • salt 
  • pepper
  • basil
  • chiliflakes


  1. Preheat the oven to 190°C / 383°F.
  2. Chop the onion and zucchini into small pieces.
  3. Fry onion and zucchini in olive oil.
  4. Cut the top off the tomatoes and scoop out the inside with a spoon, adding it to the zucchini and onion in the frying pan and let it simmer for a couple of minutes.
  5. Break the feta cheese into pieces and mix with the sauce.
  6. Add salt, pepper and your favorite spices – fresh basil and chili flakes are a perfect match!
  7. Stuff the tomatoes with the sauce and replace the top of the tomatoes. 
  8. Leave in the oven for about 20 minutes or until cooked.
