Healthy gravy

Ingredients

2 large carrots
1 large onion
1 chopped garlic clove
1 tsp dried thyme
1 tbsp canola oil
1 tbsp tomato paste
3 tbsp balsamic vinegar
4 cups / 960 ml chicken stock
1 tbsp cornstarch
1/4 cup / 60 ml water

Instructions

  1. Chop the carrots and the onion.
  2. Add oil to a saucepan on a medium-high heat, then add the vegetables and cook them for about 10-15 mins.
  3. Add the tomato paste, garlic, thyme and vinegar.
  4. Pour in the stock and season with salt and pepper.
  5. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Mix until smooth using a hand mixer or in a blender. Strain the gravy.
  7. Whisk together the cornstarch with water and add it to the gravy. Bring to a boil, stirring constantly while the gravy is thickening.
