  • 7 oz / 200 g cauliflower, in pieces
  • 1 vegetable stock cube
  • 3/4 cup / 1.5 dl (150 ml) heavy cream
  • 1 tablespoon lemon juice
  • 2 slices (2.8 oz / 80 g pancetta chopped in pieces
  • 1 oz / 30 g cheddar, grated
  • chives for garnish


  1. Boil water and a cube of vegetable stock in a saucepan.
  2. Add the cauliflower and boil until it’s soft for about 10 minutes.
  3. Add the pancetta into a frying pan cook until crispy, let it drain on household paper.
  4. Mix the cauliflower and the water with a mixer rod.
  5. Add the heavy cream, lemon juice, season with salt and pepper.
