Carrot and Sweet Potato Soup

To us, for a soup to be tasty it has to be thick and full of nice condiments! This clean eating recipe is super delicious and SO EASY to make. Give it a try!

  • 200g carrots
  • 150g sweet potatoes
  • 1/2 yellow onion
  • 1 vegetable stock cube
  • 400ml water
  • 80g light quark
  • 1 Tbsp olive oil
  • 1 ½ Tbsp sunflower seeds


  1. Peel and cut the carrots, potatoes and onion into smaller pieces.
  2. Add water, vegetable cube and the veggies in a casserole under a lid and boil for 10 minutes or until soft.
  3. Mix smooth with a rod mixer season with salt and pepper. Add some more water if it´s too thick.
  4. Top it with quark, olive oil and sunflower seeds.
  5. Tip! Make it even greener with some fresh herbs and onion on top.
  6. Remember if you prep for food boxes save the seeds and quark in a separate box.
