Ingredients:

  • 3 dl whole-grain oats
  • 3 dl hot water
  • 3 tbsp lime juice
  • 2 tbsp agave syrup
  • 2 tsp blackcurrant powder (is totally optionally, but gives a nice contrast color and a hint of blackcurrant taste)

Carrot “Sauce”

  • 2 middle sized carrots
  • 3 dates
  • 1 dl oat milk
  • 1 pinch vanilla extract
  • 1 tbsp chia seeds
  • For the topping: Use whatever fruits you have on hand- pomegranate, oranges and coconut chips.

1. Boil water for the porridge. Pour it over the oats and add lime juice, agave syrup and blackcurrant powder. Stir and let it sit for approximately 10 minutes.

2. Peel the carrots and chop them in chunks of roughly 2 cm. Add dates (remove the core), oat milk, vanilla extract and chia seeds. Blend to your desired consistency.

3. Split the porridge into 2 bowls, cover with carrot “sauce” and top with some fruit. Pour some extra oat milk on top of the porridge and enjoy!
