This vegan taco salad that takes only 20 min to make and could be the perfect meal for a Sunday night!

Ingredients

  • ½  red pepper
  • ¼ red onions
  • ¼ cup / ½ dl (56 ml) kernel corn
  • 1/2 cup / 1 dl (118 ml) black beans, cooked
  • 3.5 oz / 100 g firm tofu
  • 1 tbsp rapeseed oil
  • ½ tsp cumin
  • ½ tsp pepper powder
  • 1/2 cup / 1 dl (118 ml) shredded green kale
  • 1 medium tortilla bread

Instructions

  1. Cut the red pepper and onions into smaller pieces.
  2. Cut the tofu into cubes, fry the tofu in oil in a frying pan, season with spices, salt and pepper.
  3. Place the tortilla bread in a bowl, add the fried tofu, vegetables and the kale.
  4. Stand back and absorb the adulation for creating such a culinary masterpiece.
  5. Tip! Serve with cilantro and a lime wedge.
