Ingredients

  • 4 eggs
  • 28.2 oz / 800 g of fresh potatoes
  • 1 red onion
  • 1 dl chives
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 14 oz / 400 g  cooked peeled prawns
  • 1.8 oz / 50 g pea shoots
  • 1 1/4 cup / 3 dl light quark
  • 1 fish broth dice
  • 1/2 cup / 1 dl (100 ml) dill
  • 1 lemon

Instructions

  1. Boil the potatoes softly in lightly salted water, drain and let them cool, then halve them.
  2. Boil water and add the eggs, cook for 8 minutes, peel and split in half.
  3. Finely chop red onion and chives, mix with potatoes, salt, and pepper.
  4. Mix together the quark, finely ground broth dice, finely chopped dill and lemon zest.
  5. Divide the lemon into wedges.
  6. Divide into 4 bowls, top with shrimp, dressing, pea shoots and lemon wedges.
